We love to try new things to eat in our home. I’m usually the one who cooks the fancier meals because it has been anonymously decided that I’m the better cook. I have been getting these whole chickens from the grocery store because they are cheaper to feed our family of five. I typically cook them differently than this, but Crystal requested that I make these two with brown sugar and pineapple.

I decided to go ahead and try it and it turned out completely delicious. As a result, I’m eager to share with you this new recipe that will be one I’m confident you’ll want to add to your menu plans often. These two simple, sweet pineapple whole chickens lasted through two meals with homemade mashed potatoes, rolls, and vegetables.

Ingredients

 
Meat
  • 2 Chickens, whole
Produce
  • 1 can Pineapple chunks
Baking & Spices
  • 1 Whole bag Brown sugar, light
 
Dairy
  • 4 1/2 sticks Butter
Other
  • Aluminum foil

 

  • Preheated oven at 300 degrees

 

  • Big roasting pan
     

Place the whole chickens in the pans in the aluminum foil covered pans. Put two sticks of butter in each whole chicken and then divide the 1/2 stick up between each chicken on top of them. Mix together the pineapple juice and brown sugar together really well, and then spread it across both chickens. Then take the pineapple chunks and place them on top of the chickens.

Cook in the oven until chicken falls off the bone. (About 5-6 hours)
